Palakura Tomato Curry ( Spinach tomato curry)


Preparation Time : 20 mins

Serves: 4 People

Ingredients:

Spinach - 1 full bunch( about 500 grams)

Oil - 4 tbsp

Curry Leaves - 2Garlic - 3 pieces

Cumin and Mustard Seeds - 1/4 tsp eachTomatoes - 2 medium size(Finely chopped)

Onion  - 1 medium ( Finely chopped)

Turmeric Powder - pinch

Asfoetida (Inguva)- pinchDry Chilli - 2/3 pieces

Coriander Leaves - as required

Salt - as required

Chilli powser - as required

Directions:

1. First wash the spinach making sure it is clean and then chop into small pieces.

2. Heat oil in a pan and add cumin, mustard , turmeric powder, Asfoetida(Inguva) and fry them. Put the stove in medium level.

3. Add curry leaves, mashed garlic, red chilli and fry them for 2 minutes until the raw garlic smell is gone.

4. Now Add the cut onion and the stir well and fry until the onions are cooked well  for 2-3 minutes.

5.  Add salt, Chilli powder to this and then add  cut spinach and fry them for 5 minutes on medium flame. Keep mixing the entire ingredients with spinach.

6. After 2-3 minutes, you will see that the spinach turns into dark green and the quantity is reduced to half. This means it is well cooked. Keep the lid closed for about a minute.

7. Now, remove the lid and add chopped tomatoes and mix well.

8. When the tomatoes are cooked well, add chopped coriander.
Optional : add 2 tablespoons of milk to add etxra flavour and mix well.

9. Turn the stove off and the receipe is ready.

Note : Best goes with Roti, Rice.
