Tomato Rasam
Serves: 4 People
Ingredients:
Tomatoes - 2 medium sized
Oil - 2 tbsp
Tamarind paste- 1 tablespoon
Curry Leaves - 2
Garlic - 2 pieces (mashed)
Cumin and Mustard Seeds - 1/4 tsp each
Rasam powder - 1 1/2 table spoon
red chillies - 2 pieces
Turmeric powder - pinch
Asfoetida (Inguva)- pinch
Coriander Leaves - as required
Salt - as required
Directions:
1. Cut the tomatoes into 4 parts and boil them with water in microwave for about 2 mins until tomatoes turn little mushy. Keep them aside to cool. Donot throw the water.
2.Heat oil in a pan and add cumin, mustard , Asfoetida(Inguva), curry leaves and fry them. Put the stove in medium level.
3. Add mashed garlic, red chilli and fry them for 2 minutes until the raw garlic smell is gone.
4. Now Add the boiled tomato water into this. with a spatula, mash the tomatoes to paste. Now that the tomatoes are already little mushy it will be easy to blend them to the mixture in the vessel.
5. Add rasam powder, salt,tamarind paste to this mixture.
6. Let it boil for about 10 minutes.
7. You would notice the flavour of the rasam. Add coriander leaves.
8. Turn the stove off and the receipe is ready.
Note : Best served with Rice, idly or can be consumed directly as a soup/starter.
