Aloo Tomato Fry (Upma Style)



Serves: 4 People

Ingredients:


Boiled Potaotes - 4 or 5 pieces( about 500 grams)

Oil - 4 tbsp

Curry Leaves - 2

Garlic - 3 pieces

Cumin and Mustard Seeds - 1/4 tsp each

Tomatoes - 1 medium size(Finely chopped)

Onion  - 1 medium ( Finely chopped)

Turmeric Powder - pinch

Asfoetida (Inguva)- pinch

Dry Chilli - 2/3 pieces

Coriander Leaves - as required

Salt - as required

Chilli powser - as required

Directions:

1. Peel skin of Potatoes and microwave boil them for 6 minutes. If boiling over pressure cooker, make sure they dont turn out too mushy. Cut them into pieces.

2. Heat oil in a pan and add cumin, mustard , turmeric powder, Asfoetida(Inguva) and fry them. Put the stove in medium level.

3. Add curry leaves, mashed garlic, red chilli and fry them for 2 minutes until the raw garlic smell is gone.

4. Now Add the cut onion and the stir well and fry until the onions are cooked well  for 2-3 minutes.

5.  Add salt, Chilli powder to this and then add cut potatoes and fry them for 2-3 minutes on medium flame. Keep mixing the entire ingredients.

6. Now,  add chopped tomatoes and mix well. You can add shredded coconut here if desired. It adds extra flavour.

7. When the tomatoes are cooked well, add chopped coriander.
Optional : add 2 tablespoons of milk to add etxra flavour and mix well.


8. Turn the stove off and the receipe is ready.

Note : Best goes with Roti, Rice.
