Vegetable Noodles



Preparation time : 15 mins

Serves 2

Ingredients:

Noodles - 2 cakes - ( boiled, drained in cold water)

Tomatoes - 2 - small size

Capsicum - 1

Cumin seeds  : 1/4 tablespoon

Mustard seeds : 1/4 tablespoon

Curry leaves - 2 leaves

Spring Onions - 1 - cut into small pieces


Green Chillis - 2 - Slit lengthwise

Onion - big - finely chopped

Turmeric - pinch

Red Chilli powder - 1/2 tablespoon

Coriander powder : 1/2 tablespoon

Cumin Powder - 1/4 tablespoon

Salt - as required

Coriander leaves - for garnishing

Noodles Masala - 1 tablespoon (Optional)

Method:

1. Heat oil in pan, add cumin seeds and mustard seeds and let them splutter.

2. Add curry leaves, green chillis, spring onions and saute it until the raw smell goes.

3. On medium flame, add chopped onions, turmeric and then saute until onions turn brown then add little bit salt.

4. Add chilli powder, cumin powder, coriander powder, Noodles Masala and mix well.

5. Add cut tomatoes and capsicum and keep stirring them for 4 mins. Place the lid and cook for 2 mins.

7. Add Noddles and saute them for 2 mins and Place the lid and reduce the flame and cook for  3 mins.

8. Adjust salt and once the contents are mixed well, garnish with coriander.
